Spicy Tomato Zorn Glaze

A rich tomato base, the heat of Zorn Hot Sauce, and melted cheese on top — the burger sauce that replaces everything else in your fridge door.

There are two kinds of burger nights. The first kind is fine — a good patty, a decent bun, some ketchup from a bottle that's been in the fridge since last summer. The second kind is the kind where someone makes the sauce from scratch, the whole kitchen smells incredible before the first patty even hits the grill, and nobody talks for the first three minutes of eating. The Spicy Tomato Zorn Glaze is what makes the second kind of burger night possible.

Tomato-based burger sauces have a long and well-earned tradition. But this one is different. A deeply reduced tomato base layered with garlic, smoked paprika, and a generous pour of Zorn Hot Sauce creates something that works as both a glaze — applied to the patty in the final moments of cooking — and a sauce, spooned generously over the finished burger and allowed to pool around the base of the bun. Topped with melted cheese, it becomes the kind of burger experience that makes takeout feel pointless.

Why tomato and Zorn Hot Sauce belong on a burger

Tomatoes and beef are a natural pairing — the glutamates in cooked tomato amplify the umami already present in a well-seasoned beef patty, making both taste richer and more deeply savory than they would alone. Reducing the tomato base concentrates those glutamates while driving off excess water, creating a glaze thick enough to cling to the patty's surface without sliding off when you bite in. Zorn Hot Sauce adds chili heat that builds through the tomato's natural sweetness, producing a finish that's genuinely complex — bright at first, warming through the middle, and lingering pleasantly at the end.

The dual-purpose nature of this recipe is what makes it genuinely useful. Applied as a glaze during the last two minutes of cooking, it caramelizes into the patty's crust. Used as a sauce at the table, it brings moisture and flavor to every layer of the burger. Use it both ways simultaneously and you have something that holds up through the entire eating experience from first bite to last.

How to make it

  1. Build the sauce base. Heat olive oil in a medium saucepan over medium heat. Add the grated onion and cook for 3–4 minutes until softened and beginning to turn golden. Add the minced garlic and cook for another 60 seconds until fragrant.

  2. Add the tomato. Stir in the tomato paste and cook for 2 minutes, letting it toast slightly against the bottom of the pan — this step deepens the tomato flavor significantly. Pour in the passata and stir to combine, scraping up any toasted bits from the base of the pan.

  3. Season and reduce. Add the Zorn Hot Sauce, brown sugar, apple cider vinegar, Worcestershire sauce, smoked paprika, oregano, onion powder, salt, pepper, and cayenne. Stir well to combine. Bring to a gentle simmer and cook uncovered for 15–18 minutes, stirring every few minutes, until thickened to a glossy, spoonable consistency. Taste and adjust heat with extra Zorn if desired.

  4. Divide the sauce. Transfer half the sauce to a small bowl for serving at the table. Keep the remaining half warm in the pan for glazing. Do not use the same sauce for raw meat contact and serving — keep them separate.

  5. Form and season the patties. Combine the beef mince gently with salt, pepper, garlic powder, and Worcestershire sauce. Divide into 6 equal portions and shape into patties slightly wider than your buns — they will shrink during cooking. Press a small indent in the centre of each patty with your thumb to prevent doming.

  6. Grill the patties. Heat the grill or griddle to high. Cook the patties for 3–4 minutes per side without pressing down — pressing expels the juices that make a great burger worth eating. In the final 2 minutes, brush the tomato Zorn glaze generously over the top of each patty.

  7. Melt the cheese. Immediately after applying the glaze, lay a slice or two of cheese over each patty. Close the grill lid or tent with foil for 60 seconds until the cheese is fully melted and slightly bubbling over the edges of the glazed patty. Remove from heat.

  8. Build and serve. Spread a spoonful of the reserved warm sauce on both the top and bottom toasted bun. Add lettuce, tomato, pickles, and onion, then crown with the glazed, cheese-topped patty. Serve immediately with extra sauce on the side.

Key technique

Toasting the tomato paste before adding liquid is the single step most home cooks skip — and it makes the biggest difference. Raw tomato paste tastes tinny and sharp. Toasted tomato paste tastes deep, savory, and almost meaty. Two minutes in a hot pan transforms the entire flavor foundation of the sauce.

Best cheeses for this glaze

The Spicy Tomato Zorn Glaze has enough bold flavor to stand up to assertive cheeses that a milder burger sauce couldn't handle. The heat in the glaze cuts through fat beautifully, making richer, more pungent varieties genuinely shine here.

Pepper jack

Smoked gouda

Aged cheddar

Gruyère

Provolone

American cheese

Pepper jack is the obvious pairing — its own chili heat doubles down on the Zorn and creates a fiery, cohesive experience. Smoked gouda echoes the smoked paprika in the sauce and melts into an incredibly creamy layer. Aged cheddar brings sharpness that contrasts with the sauce's sweetness. For the most indulgent option, double-stack smoked gouda and aged cheddar together — the combination is genuinely extraordinary against the tomato Zorn base.

Beyond burgers — other uses for this glaze

Pizza sauce

Meatball sub sauce

Shakshuka base

Grilled chicken glaze

Dipping sauce for fries

Flatbread topping

The Spicy Tomato Zorn Glaze is too good to save only for burgers. Thinned slightly with a splash of water, it makes an exceptional pizza sauce with a heat level that transforms a standard margherita into something with real personality. Spooned over meatballs in a sub roll, it rivals any restaurant version. Used as the base for shakshuka — eggs poached directly in the simmering sauce — it becomes a fiery weekend brunch that earns its reputation. Make a double batch and find it disappearing long before the week is out.

Make-ahead and storage

The sauce keeps well in a sealed jar in the refrigerator for up to ten days, and the flavors develop significantly after the first 24 hours as the spices and garlic continue to infuse. It also freezes exceptionally well for up to three months — portion it into ice cube trays for single-serving convenience. Reheat gently over low heat with a splash of water to restore the right consistency for glazing or serving.
