Buffalo wings don't need reinvention so much as they need the right hot sauce. The formula has been settled for decades — crispy fried or baked wings, tossed hot in a butter-based sauce, served with something cold and creamy on the side. What changes everything is the sauce itself, and that's exactly where the Zorn Hot Sauce earns its place. Sharper and more layered than the classic cayenne pepper sauce most buffalo recipes rely on, it brings real depth to a format that's easy to phone in but genuinely rewarding when done right.
This version skips deep frying in favor of a high-heat baking method that delivers a shatteringly crisp skin without a pot of hot oil to manage — ideal for anyone making a big batch for a crowd. The wings get tossed hot in Zorn buffalo butter straight from the oven, the same way they would at the bar that does it best.
Why Zorn makes a better buffalo sauce
Classic buffalo sauce is built on a deceptively simple formula — hot sauce and butter, whisked together until glossy and emulsified. The quality of that hot sauce determines almost everything about the final result. Zorn Hot Sauce brings a chili complexity that goes beyond straightforward heat, giving the finished buffalo sauce a depth that a single-note cayenne sauce can't match. The butter tempers the heat and adds richness, while a touch of honey and vinegar in this version rounds out the sharper edges, producing a sauce that's balanced rather than purely aggressive.
Getting truly crispy baked wings comes down to two factors most recipes skip — patting the wings completely dry before seasoning, and a baking powder coating that draws moisture to the surface during cooking, where it evaporates and crisps the skin. Combined with high oven heat and a wire rack that allows air to circulate underneath, the result rivals deep frying without the mess or the oil.

How to make it
Dry the wings thoroughly. Pat the chicken wings completely dry with paper towels — this step cannot be rushed, as any surface moisture steams the skin instead of crisping it. Let them sit on a wire rack uncovered in the refrigerator for at least 30 minutes, or up to overnight, to dry out further.
Coat and season. Preheat the oven to 450°F / 230°C and set a wire rack over a foil-lined baking sheet. In a large bowl, toss the wings with the baking powder, salt, garlic powder, and pepper until evenly coated.
Arrange and bake. Arrange the wings in a single layer on the wire rack, skin-side up, leaving space between each piece for air to circulate. Bake for 40–45 minutes, flipping halfway through, until deeply golden and crisp, and the internal temperature reaches 165°F / 74°C.
Make the buffalo sauce. While the wings bake, melt the butter in a small saucepan over low heat. Whisk in the Zorn Hot Sauce, honey, white vinegar, garlic powder, and Worcestershire sauce until smooth and fully emulsified. Keep warm over the lowest possible heat, whisking occasionally to prevent separation.
Toss while hot. As soon as the wings come out of the oven, transfer them to a large bowl. Pour the warm Zorn buffalo sauce over the top and toss thoroughly until every wing is evenly glazed and glossy.
Plate and serve. Arrange the glazed wings on a serving platter, scatter with fresh chives or parsley, and serve immediately with ranch or blue cheese dressing and celery and carrot sticks alongside.
Key technique
Always toss wings in the sauce while they're piping hot from the oven, never after they've cooled even slightly. Hot wings absorb the sauce into the crisp surface rather than letting it pool at the bottom of the bowl, which means every wing gets evenly coated instead of just the ones on top.
Choosing your heat level
Mild
¼ cup Zorn
Classic
½ cup Zorn
Fiery
¾ cup Zorn
This recipe is written for a classic, well-balanced buffalo heat level. To dial it back for a crowd that's heat-sensitive, reduce the Zorn Hot Sauce to ¼ cup and increase the butter by a tablespoon to maintain the right sauce consistency. For those chasing real fire, push the Zorn up to ¾ cup and reduce the honey slightly to keep the sweetness from masking the heat. Keep the butter ratio roughly consistent regardless of heat level — it's what gives the sauce its glossy, clinging texture.
What to serve alongside
Ranch dressing
Blue cheese dip
Celery sticks
Carrot sticks
The classic celery, carrot, and blue cheese trio exists for good reason — the cool crunch and creamy tang both genuinely temper the heat rather than just sitting next to it decoratively. Ranch works just as well for those who prefer a milder dip. Beyond the obvious pairings, these wings hold their own as the centerpiece of a full game day spread alongside nachos, sliders, or a tray of the jalapeño poppers from earlier in this series — a wing platter rarely needs much else beside it.
Make-ahead and storage
Wings can be dried, seasoned, and refrigerated uncoated up to 24 hours ahead — the extra time in the fridge actually improves the crispness of the final skin. The buffalo sauce can be made up to a week in advance and stored in a sealed jar in the refrigerator, gently reheated before tossing. Baked, unsauced wings can be frozen for up to two months; reheat from frozen at 425°F / 220°C for 20–25 minutes before tossing in freshly warmed sauce. Always sauce just before serving — sauced wings lose their crispness quickly if held or stored.
